How To Make Zesty Quinoa Salad

Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Juice of 1 lemon
- 3 tablespoons extra virgin olive oil
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions

In a medium pot, bring the vegetable broth to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is cooked and fluffy.

In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and mint.

In a separate small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the dressing.

Pour the dressing over the quinoa mixture and toss until everything is well coated.

Serve the zesty quinoa salad chilled or at room temperature.
