Ingredients

  • 6 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup kalamata olives
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • salt and pepper to taste

Instructions

  1. In a large bowl, combine mixed greens, tomatoes, cucumber, red onion, kalamata olives, feta cheese, parsley and mint.

  2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt and pepper.

  3. Drizzle dressing over salad and toss gently to combine.

  4. Serve immediately.
