How To Make Warm Quinoa Salad

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup chopped fresh parsley
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and drain.

  2. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is tender and fluffy.

  3. In a large skillet, heat the olive oil over medium heat. Add the bell peppers and red onion. Cook for 5 minutes, or until the vegetables are tender.

  4. In a large bowl, combine the cooked quinoa, cooked vegetables, cherry tomatoes, cucumber, parsley, lemon juice, salt, and pepper. Toss until well combined.

  5. Serve the warm quinoa salad as a main dish or as a side dish. Enjoy!
