How To Make Warm Quinoa Salad

Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup chopped fresh parsley
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

Rinse the quinoa under cold water and drain.

In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is tender and fluffy.

In a large skillet, heat the olive oil over medium heat. Add the bell peppers and red onion. Cook for 5 minutes, or until the vegetables are tender.

In a large bowl, combine the cooked quinoa, cooked vegetables, cherry tomatoes, cucumber, parsley, lemon juice, salt, and pepper. Toss until well combined.
