  • 1 lb potatoes, peeled and diced
  • 1 cup broad beans, blanched and peeled
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp Dijon mustard
  • 2 green onions, thinly sliced
  • Salt and pepper to taste


  1. Boil the diced potatoes in salted water until tender. Drain and let cool.

  2. In a large bowl, combine the cooked potatoes and broad beans.

  3. In a separate bowl, mix together the mayonnaise, sour cream, Dijon mustard, green onions, salt, and pepper.

  4. Pour the dressing over the potato and broad bean mixture. Toss gently to combine.

  5. Refrigerate for at least 1 hour before serving.
