Ingredients
- 2 cups fresh broad beans, shelled
- 4 ounces pecorino cheese, thinly sliced
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper, to taste
- Fresh mint leaves, for garnish
Instructions

Bring a large pot of salted water to a boil. Add the broad beans and cook for 3-4 minutes, until tender. Drain and rinse under cold water to cool.

Gently peel the outer skin off the broad beans and place them in a serving bowl.

Add the sliced pecorino cheese to the bowl.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle the dressing over the broad beans and pecorino cheese.

Toss to combine all the ingredients.

Garnish with fresh mint leaves before serving.
