Serves:

Ingredients

  • 1 cup barley
  • 2 cups water
  • 1 cup broad beans, shelled
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup feta cheese, crumbled
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring water to a boil. Add barley and reduce heat to low. Cover and simmer for 40 minutes or until barley is tender. Drain any excess water and let cool.

  2. In a large mixing bowl, combine cooked barley, broad beans, cherry tomatoes, red onion, and mint leaves.

  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss gently to combine.

  4. Sprinkle crumbled feta cheese over the top of the salad.

  5. Serve chilled or at room temperature.
