Ingredients

  • 6 cups fresh spinach leaves
  • 1 cup cooked broad beans
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced red onion
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the spinach, broad beans, feta cheese, red onion, and cherry tomatoes.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the salad and toss to coat evenly.

  4. Serve immediately and enjoy!
