Serves:

Ingredients

  • 1 cup orzo
  • 1 cup broad beans, shelled
  • 1 cup peas, fresh or frozen
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh mint leaves, chopped
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the orzo according to package instructions. Drain and set aside to cool.

  2. In a pot of boiling water, blanch the broad beans for 2 minutes. Drain and transfer to a bowl of ice water to cool. Once cooled, remove the outer skins.

  3. In the same pot, blanch the peas for 1-2 minutes. Drain and transfer to the bowl of ice water to cool.

  4. In a large mixing bowl, combine the cooked orzo, broad beans, peas, red onion, feta cheese, and mint leaves.

  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

  6. Serve the salad chilled or at room temperature.
