How To Make Chopped Italian Salad

Chopped lettuce, pepperoni, olives, and peppers are tossed together with wine vinaigrette to make this highly customizable Italian salad.

  • lbsromaine lettuce
  • ¼lbpepperoni,sliced
  • 4ozpimientos,(1 jar), drained, sliced
  • 1cupred onion,chopped
  • cupolives,or artichoke hearts, drained
  • 3tbspwine vinegar,red or white
  • ¼cupolive oil
  • ½tspsalt
  • ¼tspfresh ground black pepper
  • ½cupparmesan,grated


  1. In a large glass or stainless-steel bowl, combine the romaine, pepperoni, pimientos, onion and the artichoke hearts or olives. Toss to combine.

  2. Add the vinegar, oil, salt, pepper and Parmesan to the bowl. Toss thoroughly to combine the ingredients.

  3. Serve and enjoy!
