How To Make Chicken Salad My Way

Ginger and star anise add piquancy to a chicken salad. Complemented by a lush dressing made out of mayonnaise, spices, honey, and mixed vegetables.

Ingredients

  • 1fresh ginger root
  • 1star anise pod
  • 2chicken breast,skinless boneless, halves
  • ½cupmayonnaise
  • tspsalt
  • 1pinchground black pepper
  • 1pinchpaprika
  • ½tsphoney
  • ½cupcelery,diced
  • ½cupapples,diced
  • ¼cupred onion,diced
  • ¼cupraisins,chopped
  • ¼cupwalnuts,chopped
  • 2tspfresh ginger root,minced

Instructions

  1. Place the 1-inch piece of ginger and star anise in a pot of water over medium heat and bring to a boil. Add chicken to the water.

  2. Lower heat to medium-low; simmer until chicken is no longer pink in the middle for 10 to 12 minutes. Remove to a plate to cool. Once cool to the touch, dice into bite-sized pieces.

  3. Make a dressing by whisking together the mayonnaise, salt, pepper, paprika, and honey; set aside.

  4. Combine the diced chicken, celery, apple, onion, raisins, walnuts, and 2 teaspoons of minced ginger in a bowl.

  5. Drizzle dressing into the chicken mixture; stir until pieces are evenly coated. Cover and refrigerate overnight.
