How To Make Chicken Salad My Way
Ginger and star anise add piquancy to a chicken salad. Complemented by a lush dressing made out of mayonnaise, spices, honey, and mixed vegetables.

Ingredients
- 1fresh ginger root
- 1star anise pod
- 2chicken breast,skinless boneless, halves
- ½cupmayonnaise
- ⅛tspsalt
- 1pinchground black pepper
- 1pinchpaprika
- ½tsphoney
- ½cupcelery,diced
- ½cupapples,diced
- ¼cupred onion,diced
- ¼cupraisins,chopped
- ¼cupwalnuts,chopped
- 2tspfresh ginger root,minced
Instructions

Place the 1-inch piece of ginger and star anise in a pot of water over medium heat and bring to a boil. Add chicken to the water.

Lower heat to medium-low; simmer until chicken is no longer pink in the middle for 10 to 12 minutes. Remove to a plate to cool. Once cool to the touch, dice into bite-sized pieces.

Make a dressing by whisking together the mayonnaise, salt, pepper, paprika, and honey; set aside.

Combine the diced chicken, celery, apple, onion, raisins, walnuts, and 2 teaspoons of minced ginger in a bowl.

Drizzle dressing into the chicken mixture; stir until pieces are evenly coated. Cover and refrigerate overnight.
