How To Make Caprese Stuffed Avocado

This stuffed avocado is full of cherry tomatoes, pesto, garlic, and mozzarella balls for a Caprese salad-inspired meal that’s perfect for a healthy lunch.

  • ½cupgrape tomatoes,or cherry, halved
  • 4ozbaby mozarella balls,bocconcini
  • 2tbspbasil pesto,homemade or store bought
  • 1tspminced garlic
  • ¼cupolive oil
  • salt and pepper,to season
  • 2ripeavocados,peeled, seeded and halved
  • 2tbspbalsamic glaze,reduction to drizzle
  • 2tbspfresh basil leaves,chopped, plus more to serve (whole)


  1. Combine tomatoes, mozzarella balls, pesto, garlic, olive oil, salt and pepper in a bowl. Toss well to evenly combine all of the flavours.

  2. Arrange prepared avocado halves onto a plate with fresh basil leaves.

  3. Spoon the Caprese filling into each avocado halve and drizzle with balsamic glaze. Top with chopped fresh basil. Serve immediately.
