
How To Make Caprese Stuffed Avocado
This stuffed avocado is full of cherry tomatoes, pesto, garlic, and mozzarella balls for a Caprese salad-inspired meal that’s perfect for a healthy lunch.

- ½cupgrape tomatoes,or cherry, halved
- 4ozbaby mozarella balls,bocconcini
- 2tbspbasil pesto,homemade or store bought
- 1tspminced garlic
- ¼cupolive oil
- salt and pepper,to season
- 2ripeavocados,peeled, seeded and halved
- 2tbspbalsamic glaze,reduction to drizzle
- 2tbspfresh basil leaves,chopped, plus more to serve (whole)
Instructions

Combine tomatoes, mozzarella balls, pesto, garlic, olive oil, salt and pepper in a bowl. Toss well to evenly combine all of the flavours.

Arrange prepared avocado halves onto a plate with fresh basil leaves.

Spoon the Caprese filling into each avocado halve and drizzle with balsamic glaze. Top with chopped fresh basil. Serve immediately.
