How To Make Tender Roast Duck with Citrus & Carrots

  • 1 whole duck (about 4.5 lbs)
  • 2 oranges
  • 3 carrots, peeled and cut into chunks
  • 4 cloves of garlic, minced
  • 1 tablespoon of fresh thyme leaves
  • 1 tablespoon of olive oil
  • Salt and black pepper to taste


  1. Preheat your oven to 350°F (175°C).

  2. Rinse the duck under cold water, then pat it dry with paper towels.

  3. Rub the duck all over with the minced garlic, thyme leaves, olive oil, salt, and black pepper.

  4. Cut one orange into quarters and stuff it into the cavity of the duck.

  5. Place the duck breast-side up on a rack in a roasting pan.

  6. Roast the duck in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).

  7. While the duck is roasting, prepare the carrots by tossing them with olive oil, salt, and black pepper.

  8. After the duck has been roasting for about 1 hour, add the carrots to the roasting pan around the duck.

  9. Cut the remaining orange into slices and place them on top of the duck.

  10. Continue roasting the duck and carrots for another 30 minutes, or until the duck is golden brown and the carrots are tender.

  11. Remove the duck from the oven and let it rest for 10 minutes before carving.

  12. Serve the tender roast duck with the roasted carrots and citrus slices.
