Ingredients

  • 1 small butternut squash, peeled and diced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • Salt and pepper, to taste
  • 1 cup ricotta cheese
  • 4 large tortilla wraps
  • 1 cup fresh coriander leaves
  • 1/2 red onion, finely chopped
  • 1 small jalapeno pepper, seeded and diced
  • Juice of 1 lime
  • Salt, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Toss the butternut squash with olive oil, cumin, salt, and pepper. Place on a baking sheet and roast for 20-25 minutes, until tender and slightly caramelized.

  3. In a small bowl, mix together the coriander, red onion, jalapeno pepper, lime juice, and salt to make the salsa.

  4. Spread each tortilla with a spoonful of ricotta cheese. Top with a generous amount of roasted squash.

  5. Drizzle the coriander salsa over the squash and fold the wraps tightly.

  6. Heat a large skillet over medium heat and cook the wraps for 2-3 minutes on each side, until golden and crispy.

  7. Serve the squash & ricotta wraps with additional coriander salsa on the side.
