How To Make Squash & Ricotta Wraps with Coriander Salsa

Ingredients
- 1 small butternut squash, peeled and diced
- 1 tbsp olive oil
- 1 tsp ground cumin
- Salt and pepper, to taste
- 1 cup ricotta cheese
- 4 large tortilla wraps
- 1 cup fresh coriander leaves
- 1/2 red onion, finely chopped
- 1 small jalapeno pepper, seeded and diced
- Juice of 1 lime
- Salt, to taste
Instructions

Preheat the oven to 400°F (200°C).

Toss the butternut squash with olive oil, cumin, salt, and pepper. Place on a baking sheet and roast for 20-25 minutes, until tender and slightly caramelized.

In a small bowl, mix together the coriander, red onion, jalapeno pepper, lime juice, and salt to make the salsa.

Spread each tortilla with a spoonful of ricotta cheese. Top with a generous amount of roasted squash.

Drizzle the coriander salsa over the squash and fold the wraps tightly.

Heat a large skillet over medium heat and cook the wraps for 2-3 minutes on each side, until golden and crispy.

Serve the squash & ricotta wraps with additional coriander salsa on the side.
