How To Make Grilled Duck Breast with Minted Peas

Ingredients
- 4 duck breasts
- 2 cups of fresh or frozen peas
- 1 tablespoon of fresh mint leaves, chopped
- 2 tablespoons of butter
- Salt and black pepper to taste

Preheat the grill to medium-high heat.

Score the skin of the duck breasts in a diamond pattern and season with salt and pepper.

Place the duck breasts skin-side down on the grill and cook for about 6-8 minutes until the skin is crispy. Flip and cook for another 4-5 minutes for medium-rare doneness.

Remove the duck breasts from the grill and let them rest for a couple of minutes before slicing.

While the duck is resting, cook the peas in boiling water for about 3-4 minutes until they are tender. Drain and transfer the peas to a bowl.

Add the chopped mint leaves and butter to the bowl with the peas. Season with salt and pepper and toss to combine.

Slice the duck breasts and serve them with the minted peas on the side.
