How To Make Roasted Carrot & Whipped Feta Tart

- 1 sheet of puff pastry
- 4 medium-sized carrots, peeled and sliced into thin strips
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 cup feta cheese
- 1/4 cup heavy cream
- 1/4 cup chopped fresh parsley

Preheat the oven to 400°F (200°C).

Place the sliced carrots on a baking sheet and drizzle with olive oil. Season with salt and pepper, then toss to coat.

Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized.

Meanwhile, roll out the puff pastry sheet on a lightly floured surface. Transfer the pastry to a baking sheet lined with parchment paper.

In a small bowl, combine the feta cheese and heavy cream. Using an electric mixer, whip the mixture until smooth and creamy.

Spread the whipped feta mixture evenly over the puff pastry, leaving a small border around the edges.
