How To Make Spice-crusted Salmon with Sautéed Potatoes & Spinach

Ingredients

  • 4 salmon fillets
  • 2 tbsp paprika
  • 1 tbsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 lb baby potatoes, halved
  • 2 cups fresh spinach
  • 2 tbsp butter

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, mix together the paprika, cumin, garlic powder, onion powder, salt, and black pepper.

  3. Rub the spice mixture evenly onto both sides of the salmon fillets.

  4. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Place the salmon fillets in the skillet, skin-side down, and cook for 3-4 minutes, until the skin is crispy.

  5. Transfer the skillet to the preheated oven and bake the salmon for 8-10 minutes, or until cooked to your desired doneness.

  6. While the salmon is baking, heat the remaining 1 tablespoon of olive oil in a separate skillet over medium heat. Add the halved baby potatoes and cook for 10-12 minutes, stirring occasionally, until they are crispy and golden brown.

  7. Add the butter to the skillet with the potatoes, along with the fresh spinach. Sauté for an additional 2-3 minutes, until the spinach is wilted.

  8. Serve the spice-crusted salmon with the sautéed potatoes and spinach.
