Ingredients

  • 1 lb pork tenderloin
  • 1 tbsp black peppercorns, coarsely ground
  • 2 tbsp fresh thyme
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Salt, to taste

Instructions

  1. Preheat oven to 400°F.

  2. Rub the pork tenderloin all over with the olive oil.

  3. In a small bowl, mix together the ground peppercorns, fresh thyme, garlic powder, and salt.

  4. Rub the peppercorn and thyme mixture all over the pork tenderloin, pressing the mixture into the meat.

  5. Roast the pork tenderloin in the preheated oven for 25-30 minutes, or until the internal temperature of the pork reaches 145°F.

  6. Remove the pork tenderloin from the oven and let it rest for 5-10 minutes before slicing and serving.
