How To Make Oven-Roasted Brussels Sprouts with Figs

These roasted brussels sprouts are paired with savory bacon, sweet dates, and honey-like figs, for a uniquely flavor and piquant side dish!

Ingredients

  • 10bacon slices,cut in 1-inch pieces, thick cut
  • 12ozbrussels sprouts,(2 packages), cut in half
  • 6dates,chopped
  • 1sweet onion,chopped
  • 6Italian flat leaf parsley sprigs,chopped
  • ½cupbalsamic vinegar,or more to taste
  • cupdried cranberries
  • cupwhole pecans
  • ¼cupolive oil,or more to taste
  • ¼cupmission figs,quartered
  • 1tspfennel seeds
  • salt and ground black pepper,to taste

Instructions

  1. Preheat oven to 375 degrees F. Spread bacon on a baking sheet.

  2. Bake in the preheated oven for for about 20 minutes, until crispy.

  3. Remove the bacon from oven, then increase the oven temperature to 380 degrees F. Transfer bacon to a large bowl.

  4. Add the Brussels sprouts, dates, onion, parsley, vinegar, cranberries, pecans, olive oil, figs, fennel seeds, salt, and pepper; toss to combine. Spread onto a baking sheet.

  5. Bake in the hot oven for 15 to 20 minutes until tender and lightly browned.

  6. Serve and enjoy!
