How To Make Coconut Oil Roasted Brussels Sprouts

Deliciously roasted brussels sprouts with the amazing flavor of coconut oil.

Ingredients

  • 1 lb. brussels sprouts, trimmed and cut in half
  • 2 tbsp. coconut oil, melted
  • 1/2 tsp. sea salt
  • 1/4 tsp. black pepper
  • 1 tbsp. freshly squeezed lemon juice

Instructions

  1. Preheat oven to 400°F.

  2. In a large bowl, toss brussels sprouts with melted coconut oil, sea salt, and black pepper.

  3. Spread the brussels sprouts in an even layer on a baking sheet.

  4. Roast for 20-25 minutes, stirring occasionally, until the brussels sprouts are tender and golden brown.

  5. Drizzle with freshly squeezed lemon juice before serving.
