Got leftover roast beef? This easy fajita recipe turns juicy and spiced beef into a quick Mexican dish with tortillas and gravy.

Ingredients
- 2tbspcanola oil
- 1largeonion
- 1largered bell pepper
- 2largegarlic cloves
- 1tbspchili powder
- kosher salt and freshly ground pepper,to taste
- ½*Coriander-Dusted Roast Beef,(see Recipe Notes for recipe) or roast beef
- ¼cupreserved gravy from the roast beef,or other beef gravy
- 8flour tortillas,warm
- salsa
Instructions

In a large skillet, heat canola oil until shimmering. Add onion, bell pepper, garlic, and chili powder and season with salt and pepper.

Cook over high heat for about 5 minutes, stirring, until softened and browned in spots. Add beef and gravy and cook for 1 minute, stirring, until just heated through.

Serve beef and vegetables in warm tortillas with salsa, sour cream, and cilantro.
