How To Make Pressure Cooker Beef Stew Recipe

Ingredients

  • 1.5 pounds beef stew meat, cubed
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1 tablespoon vegetable oil

Instructions

  1. Season the beef with salt and pepper. Set the pressure cooker to “saute” mode and heat the vegetable oil. Brown the beef in batches until nicely seared on all sides. Remove the beef from the pot and set aside.

  2. In the same pot, add the onions and garlic. Cook until softened and fragrant, about 3 minutes.

  3. Stir in the tomato paste and cook for an additional 1 minute.

  4. Add the beef back into the pot along with the carrots, potatoes, beef broth, thyme, rosemary, and bay leaf. Give everything a good stir to combine.

  5. Close the pressure cooker and set to high pressure for 20 minutes.

  6. Once the cooking time is up, carefully release the pressure using the quick release valve.

  7. Remove the bay leaf and adjust the seasoning with salt and pepper if needed.

  8. Serve the beef stew hot with crusty bread or over mashed potatoes.
