- 1 cup of granulated sugar
- 1/2 cup of light corn syrup
- 1/4 cup of water
- 1 cup of unsalted peanuts
- 1 teaspoon of butter
- 1 teaspoon of vanilla extract
- 1 teaspoon of baking soda

Line a baking sheet with parchment paper and set aside.

In a large saucepan, combine the sugar, corn syrup, and water. Cook over medium heat, stirring constantly, until the sugar has dissolved.

Add in the peanuts and continue cooking, stirring occasionally, until the mixture reaches 300°F (150°C) on a candy thermometer.

Remove the saucepan from heat and quickly stir in the butter, vanilla extract, and baking soda. The mixture will foam up, so be careful.

Pour the peanut brittle mixture onto the prepared baking sheet and spread it out into an even layer using a spatula.
