Ingredients

  • 1.5 lbs chicken, boneless and skinless, cut into chunks
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 2 potatoes, peeled and diced
  • 2 celery stalks, sliced
  • 4 cloves of garlic, minced
  • 2 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Set the pressure cooker to “Saute” mode and heat some oil.

  2. Add the onions and garlic, sauté until fragrant.

  3. Add the chicken pieces and cook until browned on all sides.

  4. Add the carrots, potatoes, celery, thyme, rosemary, bay leaf, salt, and pepper.

  5. Pour in the chicken broth and give everything a good stir.

  6. Close the pressure cooker lid and set it to cook on high pressure for 10 minutes.

  7. Once the cooking time is up, let the pressure naturally release for 5 minutes, then do a quick release.

  8. Remove the bay leaf before serving.
