Ingredients

  • 4 ox cheeks, trimmed
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 cloves of garlic, minced
  • 2 cups red wine
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 2 sprigs of thyme
  • Salt and pepper to taste

Instructions

  1. Season the ox cheeks with salt and pepper.

  2. Heat the olive oil in the pressure cooker and brown the ox cheeks on all sides. Remove and set aside.

  3. In the same cooking pot, add the diced onion, sliced carrots, and minced garlic. Cook until vegetables are softened.

  4. Stir in the red wine, beef broth, tomato paste, and thyme sprigs. Bring to a simmer.

  5. Return the ox cheeks to the pressure cooker and secure the lid.

  6. Cook on high pressure for 1 hour.

  7. Release the pressure naturally and carefully remove the lid.

  8. Serve the ox cheeks and carrots with the sauce on top.
