Ingredients

  • lbstomatoes,(about 3)
  • ½cupKalamata olives,or other black olives
  • ¼lbfeta cheese
  • 3tbspcapers,drained
  • 3tbspflat-leaf parsley,chopped
  • ¼tspsalt
  • ¼tspfresh ground black pepper
  • ¾lbspaghetti
  • 6tbspolive oil
  • 3clovesgarlic

Instructions

  1. In a large glass or stainless-steel bowl, combine the tomatoes, olives, feta, capers, parsley, salt, and pepper.

  2. In a large pot of boiling, salted water, cook the spaghetti for about 12 minutes until just done. Drain.

  3. Meanwhile, in a medium frying pan, heat the olive oil over moderately low heat. Add the garlic and cook, stirring, for 1 minute. Add the cooked pasta and the garlic oil to the tomato mixture and toss.

  4. Serve and enjoy.
