How To Make Chicken and Chorizo Pasta Bake

Ingredients
- 8 oz pasta
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 6 oz chorizo, sliced
- 2 chicken breasts, diced
- 1 can diced tomatoes
- 1 cup tomato sauce
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
- Fresh parsley, for garnish
Instructions

Preheat the oven to 375°F (190°C). Cook the pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.

Add the chorizo and chicken to the skillet, and cook until browned and cooked through.

Stir in the diced tomatoes, tomato sauce, oregano, basil, red pepper flakes, salt, and pepper. Bring to a simmer and let cook for 5 minutes.

Add the cooked pasta to the skillet and toss to coat with the sauce.

Transfer the pasta mixture to a baking dish and sprinkle with shredded mozzarella cheese.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
