How To Make Chorizo, Orzo & Sweetcorn Summer Stew

Ingredients
- 1 tbsp olive oil
- 1 onion, finely diced
- 2 cloves of garlic, minced
- 8 oz chorizo sausage, sliced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- 1 cup orzo pasta
- 1 cup sweet corn kernels
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.

Add the chorizo sausage and cook until browned.

Add the red bell pepper and cook for another 2-3 minutes until softened.

Stir in the diced tomatoes, chicken broth, orzo pasta, and sweet corn kernels. Season with salt and pepper.

Bring the stew to a boil, then reduce heat and simmer for 15-20 minutes until the orzo is cooked through.
