How To Make Butternut & Chorizo Spaghetti

Ingredients
- 8 oz spaghetti
- 1 butternut squash, peeled and cubed
- 8 oz chorizo sausage, sliced
- 2 cloves garlic, minced
- 1/2 tsp smoked paprika
- 1 cup chicken broth
- 1/4 cup heavy cream
- Salt and pepper, to taste
- 1/4 cup grated Parmesan cheese
- Fresh parsley, for garnish
Instructions

Cook the spaghetti according to package instructions. Drain and set aside.

Preheat the oven to 400°F (200°C). Place the cubed butternut squash on a baking sheet and drizzle with olive oil. Season with salt and pepper. Roast in the oven for 20-25 minutes, or until tender.

In a large skillet, cook the chorizo over medium heat until browned. Remove from the skillet and set aside.

In the same skillet, sauté the minced garlic until fragrant. Add the smoked paprika and cook for another minute.

Add the chicken broth to the skillet and bring to a simmer. Stir in the heavy cream and season with salt and pepper.

Add the cooked spaghetti, roasted butternut squash, and cooked chorizo to the skillet. Toss everything together until well coated in the sauce.

Serve the butternut and chorizo spaghetti hot, garnished with grated Parmesan cheese and fresh parsley.
