Ingredients
- 2 pounds of chitterlings (cleaned and pre-cooked)
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 bell pepper, diced
- 2 stalks of celery, diced
- 2 tablespoons of vegetable oil
- 1 teaspoon of thyme
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- 1/2 teaspoon of black pepper
- 1 bay leaf
- Salt to taste
- 4 cups of water
Instructions

In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, bell pepper, and celery. Cook until vegetables are softened.

Add the chitterlings to the pot and season with thyme, paprika, cayenne pepper, black pepper, bay leaf, and salt. Stir to coat the chitterlings with the spices.

Pour in the water and bring to a boil. Reduce the heat to low, cover, and simmer for 3 hours or until the chitterlings are tender, stirring occasionally.

Serve the Creole Chitterlings hot with cornbread.
