Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 4 cups chicken stock
  • 1 can diced tomatoes
  • 1 lb smoked sausage, sliced
  • 1 lb boneless, skinless chicken thighs, diced
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp Creole seasoning
  • 2 bay leaves
  • Hot sauce, to taste
  • Cooked white rice, to serve
  • Chopped green onions, for garnish

Instructions

  1. Heat vegetable oil in a large Dutch oven or pot over medium-high heat.

  2. Add flour and whisk constantly for 15-20 minutes until the roux turns a dark brown color.

  3. Add onions, bell pepper, celery, and garlic, and stir to combine.

  4. Add chicken stock, diced tomatoes, sausage, chicken, Creole seasoning, and bay leaves, and stir well.

  5. Bring to a simmer and let cook for 1-2 hours, stirring occasionally.

  6. Add shrimp and cook for an additional 5-7 minutes until just cooked through.

  7. Season with hot sauce to taste, and serve over white rice with chopped green onions.
