  • 250g halloumi cheese, cut into cubes
  • 2 lemons, juiced and zested
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • 2 tbsp fresh thyme leaves
  • Salt and pepper, to taste


  1. In a small bowl, mix together the lemon zest, lemon juice, olive oil, minced garlic, and fresh thyme leaves. Season with salt and pepper.

  2. Thread the halloumi cheese cubes onto skewers. Brush the kebabs generously with the thyme and lemon baste.

  3. Preheat grill to medium-high heat. Place the kebabs on the grill and cook for 2-3 minutes on each side, or until grill marks appear and the cheese is slightly softened.

  4. Remove the kebabs from the grill and brush with additional baste before serving. Serve hot.
