Ingredients

  • 2 halloumi cheese blocks, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 zucchini, sliced
  • 1 eggplant, sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large baking tray, combine the halloumi cheese, bell peppers, red onion, zucchini, and eggplant.

  3. Drizzle olive oil over the vegetables and halloumi, then sprinkle with dried oregano, dried thyme, salt, and pepper. Toss to coat evenly.

  4. Place the tray in the preheated oven and bake for 25-30 minutes, until the vegetables are tender and the halloumi is golden brown.

  5. Remove from the oven and garnish with fresh parsley before serving.
