Ingredients

  • 1 block of halloumi cheese
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. Cut the halloumi cheese, bell peppers, and red onion into bite-sized pieces.

  2. In a bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.

  3. Thread the halloumi, bell peppers, and red onion onto skewers, alternating the ingredients.

  4. Brush the skewers with the marinade mixture, making sure to coat all sides.

  5. Preheat a grill or grill pan over medium heat.

  6. Grill the skewers for about 4-5 minutes per side, until the halloumi is golden and slightly charred.

  7. Remove from the grill and serve hot.
