How To Make Tamarind Squash & Halloumi Skewers

Ingredients
- 1 small butternut squash, peeled and cut into chunks
- 1 red bell pepper, deseeded and cut into chunks
- 1 yellow bell pepper, deseeded and cut into chunks
- 1 red onion, cut into chunks
- 200g halloumi cheese, cut into chunks
- 2 tbsp olive oil
- 2 tbsp tamarind paste
- 1 tbsp honey
- 1 tsp cumin powder
- Salt and pepper, to taste
- Fresh cilantro leaves, for garnish
Instructions

Preheat the grill or oven to medium-high heat.

In a small bowl, whisk together the olive oil, tamarind paste, honey, cumin powder, salt, and pepper.

Thread the squash, bell peppers, onion, and halloumi onto skewers, alternating the ingredients.

Brush the skewers with the tamarind marinade, making sure they are well coated.

Place the skewers on the grill or in the oven and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and the halloumi is golden brown.

Remove the skewers from the heat and garnish with fresh cilantro leaves.
