Ingredients

  • 200g halloumi, grated
  • 1 courgette, grated
  • 2 spring onions, finely chopped
  • 2 tbsp sesame seeds
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • Vegetable oil, for frying
  • 2 tbsp honey
  • 1/2 tsp chilli flakes

Instructions

  1. In a large bowl, combine the grated halloumi, courgette, spring onions, sesame seeds, oregano, salt, black pepper, flour, and beaten eggs. Mix well to combine.

  2. Heat vegetable oil in a frying pan over medium heat. Spoon the fritter mixture into the pan, forming small patties. Cook for 3-4 minutes on each side, until golden brown and crispy. Remove from the pan and drain on a paper towel.

  3. In a small saucepan, heat the honey and chilli flakes together over low heat until warmed through.

  4. Drizzle the chilli honey over the fritters and serve hot.
