How To Make Crockpot Meatloaf
Served with DIY sweet and tangy glaze sauce, this tender crockpot meatloaf recipe is flavorful, easy-to-make, and surely worth the wait!

For Meatloaf:
- 2lbsground beef
- 1large yellow onion,finely minced, divided
- 12ozdried stuffing mix
- 1â…“cupswhole milk
- 2eggs,large
- 1½cupsketchup glaze,plus an additional 2 tbsp (see below)
- 1tspkosher salt
- ½tspblack pepper
For Ketchup Glaze:
- 1½cupsketchup
- ¼cuplight brown sugar
- 2tbsponion,finely minced
- 2tspapple cider vinegar
- ½tspblack pepper
Instructions
Ketchup Glaze:

In a small mixing bowl, stir or whisk all ketchup glaze ingredients (reserving the rest of the minced onion for the meatloaf itself), until combined. Set aside.
Meatloaf:

Tear off a large strip of heavy-duty aluminum foil, and press it into the bottom and up two of the sides of a 6 quart or larger slow cooker. Spray lightly with non-stick cooking spray, then set aside.

Add ground beef, remaining minced onion (from step 1), stuffing mix, milk, eggs, 2 tablespoons of ketchup glaze, salt, and pepper. Use hands to mix until just combined. Be careful not to over mix.

Shape into an oval-like shape and place into the foil-lined crockpot. Top with ½ cup of the glaze, cover, and cook on Low for 6 hours.

When finished cooking, carefully lift out the meatloaf using the foil overhang, and place it on a baking sheet. Top with â…” cup of the glaze and broil until the glaze is sticky and bubbly.

Serve sliced, with remaining glaze sauce on the side for drizzling.
