- 1 lb ground beef
- 1 cup whole wheat breadcrumbs
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1/2 cup chopped fresh parsley
- 1/2 cup grated carrot
- 1/2 cup grated zucchini
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1/4 cup tomato paste
- 1/4 cup low-sodium chicken broth
Instructions

Preheat the oven to 375°F (190°C).

In a large mixing bowl, combine ground beef, breadcrumbs, onion, garlic, parsley, grated carrot, grated zucchini, cumin, paprika, oregano, thyme, salt, black pepper, eggs, tomato paste, and chicken broth. Mix well until all ingredients are evenly combined.

Transfer the meat mixture into a greased loaf pan, pressing it down firmly.

Bake the meatloaf in the preheated oven for 40-45 minutes, or until the internal temperature reaches 160°F (71°C).
