Ingredients

  • 1 ½ pounds ground beef
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 bell pepper, finely chopped
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 eggs, beaten
  • ¼ cup milk
  • ¼ cup ketchup (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large mixing bowl, combine the ground beef, breadcrumbs, onion, garlic, carrot, bell pepper, Worcestershire sauce, Dijon mustard, dried thyme, dried oregano, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

  3. In a separate bowl, whisk together the eggs and milk. Pour the egg mixture over the meat mixture and mix until everything is well combined.

  4. Transfer the meatloaf mixture into a greased loaf pan and shape it into a loaf shape.

  5. Place the loaf pan in the preheated oven and bake for 45 minutes to 1 hour, or until the internal temperature reaches 160°F (71°C).

  6. Optional step: In the last 10 minutes of baking, brush the top of the meatloaf with ketchup for a slightly tangy and caramelized glaze.

  7. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.
