How To Make Ground Beef and Quinoa Casserole Recipe

A hearty and delicious casserole made with ground beef, quinoa, and a blend of savory spices.

Ingredients

  • 1 pound ground beef
  • 1 cup quinoa, rinsed and drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can diced tomatoes
  • 1 cup chicken or beef broth
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 1/2 tsp. smoked paprika
  • Salt and pepper, to taste
  • 1/2 cup grated cheddar cheese

Instructions

  1. Preheat the oven to 375 degrees F.

  2. Heat a large skillet over medium-high heat and add the ground beef. Cook for 5-7 minutes, breaking it up with a wooden spoon, until browned and cooked through.

  3. Add the onion, garlic, and red bell pepper to the skillet and cook for 3-5 minutes, until softened.

  4. Season the beef mixture with chili powder, cumin, smoked paprika, salt, and pepper.

  5. Add the rinsed quinoa, diced tomatoes, and chicken or beef broth to the skillet and bring to a simmer.

  6. Transfer the mixture to an 8×8 inch baking dish and top with shredded cheese.

  7. Cover with foil and bake for 30 minutes. Then remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden brown.

  8. Let the casserole cool for a few minutes before serving.
