How To Make Ground Beef and Eggplant Casserole Recipe
A hearty casserole with layers of seasoned ground beef, tender eggplant, and creamy cheese.

Ingredients
- 1 large eggplant, sliced into 1/4 inch rounds
- 1 lb ground beef
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions

Preheat oven to 375°F.

In a skillet, heat olive oil over medium-high heat. Add ground beef, onion, and garlic. Cook until beef is browned and onions are translucent.

Add diced tomatoes, dried basil, dried oregano, salt, and pepper to the skillet. Stir and cook for 5 minutes.

In a separate skillet, cook eggplant slices until lightly browned on both sides.

In a 9×9 inch casserole dish, layer half of the eggplant slices on the bottom. Top with half of the ground beef mixture. Repeat layers with remaining eggplant and ground beef mixture.

Sprinkle shredded mozzarella and grated Parmesan cheese over the top of the casserole.

Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes.
