  • 4earcorn,shucked
  • 4tbspmayonnaise,or sour cream
  • 4tbspmargarine,or butter, melted
  • 8tbspcotija cheese,or parmesan, crumbled
  • 1lime,juiced
  • chili powder,for serving
  • hot sauce,for serving


  1. Place corn in a large pot of boiling water. Cook for 5 to 7 minutes or until tender. Remove corn and drain.

  2. Cut off kernels and place in a large bowl.

  3. Mix the corn with mayonnaise, margarine, cheese and lime juice until well combined.

  4. Serve with chili powder and hot sauce for toppings. Enjoy!
