How To Make Sheet Pan Thai Glazed Salmon with Vegetables

Melt in your mouth glazed salmon has a sweet Thai-style sauce and can be cooked in just one sheet pan together with some carrots, bell peppers, and peas.

Total: 30 minutes

Serves:

Ingredients

  • 4salmon fillets
  • 1red bell pepper,chopped
  • 1green bell pepper,chopped
  • 1yellow pepper,chopped
  • 1onion,chopped
  • 1cupsnow peas
  • carrots,thinly sliced
  • ½cupThai sweet chili sauce
  • ¼cupsoy sauce
  • 1tbspfresh ginger,grated
  • 1tbspfresh lime juice
  • pinchred pepper flakes
  • cilantro and lime slices for garnish,chopped

Instructions

  1. Preheat oven to 375 degrees F and spray a cooking sheet with cooking spray. Lay the salmon skin side down surrounded by chopped vegetables.

  2. In a small bowl, whisk together Thai sweet chili sauce, soy sauce, ginger, lime juice, and red pepper flakes. Reserve ¼ cup of the marinade and drizzle the rest of the marinade over the salmon and vegetables.

  3. Cover with foil and bake for 15 minutes. Remove foil and broil for another 5 to 7 minutes until the top starts to blacken.

  4. Remove salmon from the oven and brush remaining marinade on top. Garnish with fresh cilantro and lime slices of desired.
