  • 1sweet potato
  • 2tbspgreen onionschopped
  • 2tbspparmesan cheesegrated

  • 1tspfresh rosemaryfinely chopped
  • sea salt and black pepperfreshly ground, to taste


  1. Scrub the sweet potato with a vegetable brush.

  2. Bake the sweet potato in the oven at 400 degrees F for about 45 minutes.

  3. Slice the potato lengthwise, and squish the ends toward the middle a bit to open it up.

  4. Fill the potato with onions, parmesan, butter, rosemary, salt, and black pepper.

  5. Serve, and enjoy!
