How To Make Skinny Thai Burgers with Sweet Potato Chips & Pineapple Salsa

Ingredients
- 1 lb lean ground turkey
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 green onions, finely chopped
- 1 tbsp Thai red curry paste
- 1 tbsp low-sodium soy sauce
- 1 cup panko breadcrumbs
- 4 whole wheat burger buns
- Salt and pepper, to taste
- 2 large sweet potatoes, sliced into chips
- 2 tbsp olive oil
- 1/2 tsp paprika
- 1/4 tsp chili powder
- 1 cup diced pineapple
- 1/2 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime

Preheat the oven to 400°F (200°C).

In a large bowl, combine the ground turkey, minced garlic, grated ginger, green onions, red curry paste, soy sauce, panko breadcrumbs, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Shape the turkey mixture into 4 equal-sized patties.

Heat a grill pan or skillet over medium heat and coat with cooking spray. Cook the turkey burgers for 6-8 minutes per side or until fully cooked.

While the burgers are cooking, line a baking sheet with parchment paper. In a large bowl, toss the sweet potato slices with olive oil, paprika, and chili powder. Spread the sweet potato slices in a single layer on the prepared baking sheet.

Bake the sweet potato chips for 25-30 minutes, flipping halfway through, until golden brown and crispy.

In a separate bowl, combine the diced pineapple, red bell pepper, red onion, cilantro, and lime juice to make the pineapple salsa. Mix well.

Assemble the burgers by placing each turkey patty on a whole wheat bun. Top with a spoonful of pineapple salsa.

Serve the skinny Thai burgers with the crispy sweet potato chips on the side.
