How To Make Mediterranean Baked Eggs
A flavorful dish with eggs submerged in tomato sauce, topped with feta cheese and olives.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp salt
- 4 eggs
- 1/4 cup crumbled feta cheese
- 1 tbsp sliced kalamata olives
- 1 tbsp chopped parsley
Instructions

Preheat oven to 375°F.

Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until softened.

Add diced tomatoes, paprika, cumin, and salt. Simmer for 10 minutes.

Transfer tomato mixture to a baking dish. Crack eggs into the tomato sauce.

Bake in the oven for 15-20 minutes, until the whites are set and the yolks are still runny.

Sprinkle feta cheese, kalamata olives, and parsley on top of the eggs.

Serve with crusty bread.
