How To Make Moroccan Sausage Stew

Ingredients

  • 4 Moroccan sausages
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 can of diced tomatoes
  • 1 cup of chicken broth
  • 1 tablespoon of olive oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cinnamon
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until fragrant and translucent.

  2. Add the sliced red bell pepper to the pot and cook for another 2-3 minutes, until the pepper softens.

  3. Add the Moroccan sausages to the pot and cook until browned on all sides.

  4. Stir in the diced tomatoes, chicken broth, ground cumin, ground coriander, paprika, cinnamon, salt, and pepper. Bring the stew to a simmer.

  5. Reduce the heat to low and let the stew simmer for 30-40 minutes, allowing the flavors to meld together.

  6. Serve the Moroccan sausage stew hot, garnished with fresh cilantro. Enjoy!
