- 3 cups of leftover lamb, shredded
- 4 cups of mixed greens
- 1 cucumber, sliced
- 1 bell pepper, chopped
- 1/2 red onion, sliced
- 1/4 cup of crumbled feta cheese
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions

In a large bowl, combine the shredded lamb, mixed greens, cucumber, bell pepper, and red onion.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad mixture and toss to combine.
