  • 1 1/2 pounds baby potatoes, washed and halved
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp black peppercorns, crushed
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a large bowl, mix together olive oil, garlic, thyme, peppercorns, and salt.

  3. Add in the halved baby potatoes and toss to coat.

  4. Arrange the potatoes in a single layer on a baking sheet.

  5. Roast in the oven for 25-30 minutes, or until golden and crispy.
