Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon mace
  • 1/2 cup shelled pistachios, roughly chopped
  • 2 eggs
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and mace.

  3. Stir in the chopped pistachios.

  4. In a separate bowl, beat the eggs and vanilla extract together.

  5. Gradually add the egg mixture to the flour mixture, stirring until a dough forms.

  6. Divide the dough in half and shape each half into a 10-inch long log on the prepared baking sheet.

  7. Bake for 25-30 minutes, or until the logs are lightly golden brown and firm to the touch.

  8. Let the biscotti logs cool for 5 minutes before slicing each log into 1/2 inch slices.

  9. Arrange the sliced biscotti cut-side down on the baking sheet and bake for an additional 5-7 minutes, or until golden brown and crispy.

  10. Let the biscotti cool completely on a wire rack before serving.
