How To Make Vegetarian Grilled Stuffed Bell Peppers Recipe
Delicious bell peppers stuffed with wholesome vegetarian ingredients- a perfect summer meal!

Ingredients
- 4 large bell peppers
- 1 cup cooked quinoa
- 1 cup black beans
- 1 cup chopped mushrooms
- 1 cup chopped onion
- 1 tbsp olive oil
- 1 tsp cumin powder
- 1 tsp chili powder
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese (optional)
Instructions

Preheat grill to medium-high heat.

Cut off the tops of the bell peppers and remove the seeds and membranes.

In a large bowl, mix together cooked quinoa, black beans, chopped mushrooms, chopped onion, olive oil, cumin powder, chili powder, garlic powder, and salt and pepper.

Stuff the mixture evenly into the bell peppers and cover each one with its top.

Place the stuffed bell peppers on the grill and cook for 25-30 minutes, turning occasionally, until they are tender and slightly charred.

Sprinkle shredded cheddar cheese on top of each pepper in the last 5-10 minutes of cooking (optional).

Remove from grill and serve hot.
